Fish House Punch: This may be the best drink to make for your holiday celebrations. You can make it in bulk; it has a wonderful history; and it tastes like the nectar of the gods.
Before cocktails, people drank punches. And when George Washington went to Schuylkill - a social club in what is now Pennsylvania - he drank Fish House Punch.
It is believed that Jerry Thomas recorded the original recipe for Fish House Punch (also referred to as Philadelphia Fish House Punch). But I’ve used a recipe from the 1893 World’s Fair in Chicago, which comes recommended by Ted “Dr. Cocktail” Haigh. (Side note: The 1893 World’s Fair was an extraordinary event. Do yourself a favor and read Erik Larson’s book about it.)
Bowl Quantity:
- 2 quarts Jamaica rum
- 1 quart brandy
- 1/2 pint peach brandy
- 1/2 pint maraschino liqueur
- 1 quart freshly made green tea
- 1 pint lemon juice
- 1 pound powdered (not confectioners’) sugar
- 1 bottle champagne
Stir all except the champagne together in a large pot with a lid. Let brew, advisably for two days. When ready, pour over ice in a punch bowl and stir in the champagne.
For those of us not prepared to go through this much punch, Haigh kindly offers a reduced recipe, which is what I used.
Reduction:
- 4 ounces Jamaica rum
- 2 ounces brandy
- 1/2 ounce peach brandy
- 1/2 ounce maraschino liqueur
- 2 ounces freshly made green tea
- 1 ounce lemon juice
- 1 ounce simple syrup
- 1 split champagne
Combine in a Mason jar and let brew. Pour into ice-filled glasses. Add a splash of champagne to each. Stir lightly.
